This Beef Dorito Casserole is a lively twist on classic comfort food, combining savory seasoned ground beef and beans with the irresistible crunch of Doritos and a generous blanket of melted cheese. It’s an easy-to-assemble, crowd-pleasing dish that’s perfect for a casual dinner or potluck.

Beef Dorito Casserole

Ingredients:

Instructions:

  • Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Brown Beef & Sauté Veggies: In a large skillet over medium heat, add the ground beef. Break it apart with a spoon and cook until browned. Drain any excess grease. Return the pan to the stove. Add the diced red bell pepper and diced yellow onion. Continue cooking for 3-4 more minutes, stirring occasionally, until the onion has softened.
  • Season & Simmer: Stir in the taco seasoning and water (or beef broth). Reduce the heat to low and let the mixture simmer for 5-6 minutes, or until the liquid has thickened.
  • Add Final Mix-ins: Remove the skillet from the heat. Stir in the drained canned tomatoes and green chiles, the sour cream, and the drained and rinsed black beans. Stir everything until well combined.
  • Layer the Casserole:
    • Slightly crush about 1 cup of the Cool Ranch Doritos and spread them in the bottom of the prepared baking dish to form the first layer.
    • Spoon half of the skillet mixture evenly over the crushed chips.
    • Top this with another layer of crushed Doritosand half of the shredded Mexican blend cheese.
    • Spoon on the remaining skillet mixture.
    • Finish by topping with the remaining crushed chips and the remaining Mexican blend cheese.
  • Bake: Bake for 25-30 minutes, or until the casserole is bubbling around the edges and the cheese on top is melted and starting to brown.
  • Serve: Remove from the oven and serve hot. Top individual servings with extra sour cream, salsa, hot sauce, and green onions if desired.
